LUNCH IDEAS

Lunch is easy if you plan your meals in advance. I like to make extra food for my dinners that way i can just heat up what I made the night before for lunch. I love leftovers! If you don't enjoy left overs as much as me here is a few lunch ideas.


Spicy Chicken salad

  • Rotisserie Chicken (shredded)
  • 1 1/2 tbsp plain Greek Yogurt
  • 1 tsp yellow mustard 
  • 1/2 tsp cayenne pepper
  • 1 tsp extra virgin olive oil
  • 1/4 cup diced dill pickles (I might have used more because I love pickles!)
  • Salt and Pepper to taste

Mix all ingredients together and serve on a bed of spinach. Leftovers last 1-2 days. 

Summer Salad

  • Handful of Romaine Lettuce
  • Handful of Spinach
  • 5-6 baby carrots (sliced)
  • 3-4 strawberries (sliced)
  • 1/3 of a cucumber (peeled and cubed)
  • 1/2 of a small avocado (cubed)
  • 1 tbsp of raisins
  • 1 tbsp of chopped walnuts
  • 1 tbsp of feta cheese crumbles
  • 2 slices of Nitrate Free/Uncured Bacon (chopped)- optional
  • 1 tbsp of Apple Cider Vinegar Dressing

Make Apple Cider Vinegar Dressing and store in the fridge while preparing the rest of the salad. Cook bacon in microwave for 4-6 minutes. Chop lettuce, mix with spinach. Cut carrots, strawberries, cucumber, avocado. Mix all ingredients together except dressing. Add dressing right before you serve or eat the salad. This is great with a side of chicken. Great for lunch or dinner!

Apple Cider Vinegar Dressing

  • 3/4 cup of extra virgin olive oil
  • 1/3 cup of apple cider vinegar
  • 2 tbsp of honey
  • 2 tbsp of water
  • 1 1/2 tsp of salt (more to taste)
  • 1 tsp of pepper (more to taste)

Mix all ingredients together in a bowl thoroughly. Cool in fridge while preparing the rest of salad. Mix it before pouring on salad. Leftovers can be stored in an airtight container in the fridge for up to 3 days. 


Egg and Spinach Sandwich

  • One egg (fried)
  • One egg white (fried)
  • One slice of cheese (your choice)
  • A heaping handful of spinach
  • 2 slices of whole wheat bread
  • Carrots and hummus (on the side)

Greek Yogurt Chicken Salad Wrap

  • Two large boneless skinless chicken breast (cooked)

  • 1/4 cup of Plain Greek Yogurt

  • 1/3 cup of celery (diced)

  • 1/3 cup of apple (diced)

  • 1/3 cup of grapes (diced)

  • 1/4 cup of slivered almonds

  • a dash of garlic powder

  • A whole wheat pita or whole wheat wrap

  • Cooked veggies (on the side) 

Dice or shred the cooked chicken. Place in a large bowl with the rest of the ingredients and mix together until everything is coated with the Greek yogurt. 


Curry Chicken Salad

  • 1/4 cup of low-fat mayonnaise or plain greek yogurt
  • 1 teaspoon of curry powder
  • 2 teaspoons of water
  • 1 cup of chopped or shredded chicken 
  • 3/4 cup of a chopped apple
  • 1/3 cup of diced celery
  • 3 tablespoons of raisins
  • 1/8 teaspoon of salt

Veggie Pita Pocket

  • A table spoon of hummus

  • Whole wheat pita (lightly toasted)

  • 1/4 grated Romano cheese

  • 1/2 avocado

  • 1 small cucumber

  • 1/2 bell pepper (seeded and sliced)

  • Carrots (sliced)


Spring Mix Salad with Chicken

  • 1 cup of chopped or shredded chicken

  • 1 1/2 cups of spring mix lettuce

  • 2 tbsp of raisins 

  • Almonds

  • 1/3 cup of shredded parmesan cheese

  • Cucumbers

  • Tomatoes 

  • Olive Oil and Lemon dressing
