Chicken Fried Rice

  • 4 servings of brown rice

  • 3-4 cooked chicken breasts (shredded)

  • 1 head of broccoli (steamed) 

  • A handful of carrots (steamed) 

  • A can of corn or frozen corn

  • 1 egg

  • 1 tbsp of Extra Virgin olive oil

  • Low Sodium soy sauce (to taste)

Cook rice and chicken. Shred chicken. Steam broccoli and carrots. In a separate small bowl whisk the egg with the olive oil. In a large fry pan add cooked broccoli, carrots, and the frozen corn. Cook for about 2 minutes then separate a circle in the middle of the pan. Pour the whisked egg and oil in the center. Scramble the egg, mix together with veggies. Once the corn is cooked add the chicken and rice. Mix all together. Add the soy sauce and cook on the stove top for about 7-10 minutes. (This makes excellent leftovers for the following day)


Ground turkey Chili

  • 1 pound of ground turkey

  • 2 cans of diced tomatoes

  • 1 can of tomato paste

  • 2 cans of tomato sauce

  • Chili seasoning or powder

  • Cayenne Pepper (to taste)

  • Salt and Pepper (to taste)

  • 1 tbsp Mustard (optional)

  • 1 can of water

Cook ground turkey. Add everything else into a big pot. Bring to a boil stirring occasionally for about 5 minutes. Reduce heat and continue to stir occasionally. Cook on low heat for about 20 minutes. The longer you cook it for the more the flavors will come out. This makes excellent leftovers.


Baked Salmon and Asparagus

  • Fresh Salmon

  • A bunch of asparagus

  • Extra Virgin olive oil

Season the salmon with olive oil and your choice of seasonings. I use salt, pepper, cayenne pepper, dill, and an all purpose seasoning. Baked for 20 minutes or until salmon break apart easily. Season the asparagus with olive oil, lemon pepper, garlic powder, and a little bit of lemon juice. Place in the oven for about 10-12 minutes or until the asparagus is tender.
